Check out this savory, garlic-infused soup that incorporates chickpeas and fresh herbs. It’s a plant-based soup that’s delicious and in line with the Daniel Fast!
Ingredients:
2 cups chickpeas
1 large onion, finely chopped
2 cloves of garlic, minced
1 tablespoon extra virgin olive oil
1 teaspoon cumin
1 teaspoon dried thyme
1 teaspoon ground turmeric
1 teaspoon crushed red pepper flakes (optional)
6 cups of vegetable stock
Salt and pepper to taste
2 tablespoons fresh lemon juice
Fresh parsley for garnishing
Instructions:
1. Heat the extra virgin olive oil in a large pot over medium heat.
2. Add the finely chopped onion to the pot, sauté until it becomes fragrant and translucent.
3. Incorporate the minced garlic to the pot and sauté it with the onion for 2-3 minutes.
4. Add in the cumin, dried thyme, ground turmeric and crushed red pepper flakes. Stir well for a couple of minutes, making sure that the spices coat the onion and garlic evenly.
5. Add the soaked chickpeas to the pot, stirring them well with the onion and garlic mixture.
6. Pour in the vegetable stock, making sure that it covers the chickpeas completely. Bring the soup to a boil.
7. Once boiling, reduce the heat and allow the soup to simmer. Cover the pot and let it cook for about 15 minutes.
8. Season the soup with salt and pepper according to your taste preference.
9. Right before serving, stir in the fresh lemon juice. This will brighten up the flavors and add a subtle tanginess to your soup.
10. Ladle the soup into bowls, garnish with fresh parsley.
