Here is a great recipe that compliments the Daniel Fast lifestyle very well– Quinoa stuffed red bell peppers!
Ingredients:
4 bell peppers (cut the tops of the peppers and remove the seeds inside)
2 cups cooked quinoa
1 cup corn
1 can black beans
1 diced onion
2 cloves garlic
1 tsp cumin
½ salt
½ pepper
Instructions:
Sauté onion and garlic. Mix with quinoa, corn, beans, cumin, salt, and pepper in a medium sized bowl. Stuff the mixture into bell peppers. Bake at 350 degrees Fahrenheit for about 35 minutes.

Read Psalm 27:1-5,
The Lord is my light and my salvation—
whom shall I fear?
The Lord is the stronghold of my life—
of whom shall I be afraid?
2 When the wicked advance against me
to devour me,
it is my enemies and my foes
who will stumble and fall.
3 Though an army besiege me,
my heart will not fear;
though war break out against me,
even then I will be confident.
4 One thing I ask from the Lord,
this only do I seek:
that I may dwell in the house of the Lord
all the days of my life,
to gaze on the beauty of the Lord
and to seek him in his temple.
5 For in the day of trouble
he will keep me safe in his dwelling;

and set me high upon a rock.
Food for Thought
There are times in our lives when we feel like we are surrounded by obstacles on every side–but God is with us, and we don’t have to fear. In the darkest moments of Daniel’s life, his faith in God was his light. As Christian women, we too can find strength in our faith when we are faced with difficult moments. God is our refuge and strength, our ever-present help in times of trouble!

2. Keep ready-to-eat snacks handy like chopped veggies, fruits, nuts, and seeds.

Lord, as I continue on this Daniel Fast, give me a steadfast spirit to devote myself solely to you. Like David, help me to remember that you are my light and salvation, therefore I have nothing to fear. Amen.
